Stone House, named for the exterior walls that are covered in local volcanic stone, once was a winery and cellar (or “canava”) for producing Vinsanto at the turn of the century. Vinsanto is a sweet desert wine, which originated in Santorini, and is still produced here for export around the world. At the turn of the century, Vinsanto production was among the island’s most lucrative industries. Most of the product was exported at that time to Russia, for use by the Russian Orthodox Church during the Holy Communion ritual. It is quite literally named after this use: “Vin” for wine and “santo” for saint, in the Italian language used by the Venetian shipping merchants who also played a prominent role in Santorini history. The Russian demand for Vinsanto came to an end with the Russian Revolution, having a major impact on the scale of this industry in Santorini. 

The original structure has been sensitively renovated, preserving original elements as creative design features, relics of the building’s important role in Santorini history. The sunken cylindrical troughs visible on the floor, which now act as unusual lighting features, were actually once used for distilling the Vinsanto after the grapes were pressed. The beautiful organic shape and proportions of the smooth walls, vaulted ceilings and arched openings tell the story of the canava and how it was constructed by carving into the soft pumice stone of the village hills.
